Dy's Orange Bran Muffins


These muffins contain ground flaxseed.  Flax contains lignans, plant-base compounds known to shrink existing breast and colon tumors and stop new ones from forming.

1 1/2c    oat bran                                     1    c    brown sugar
1       c    all purpose flour                        1    c    buttermilk
1       c    flaxseed, ground                       1/2c    canola oil
1       c    wheat bran                                2         eggs
1 Tbsp  baking powder                             1 tsp   baking soda
1/2 tsp salt                                              1 1/2c golden raisins
2            navel oranges, slices & seeded
 
1.  Preheat the oven to 375 degrees.  Line two 12-cup muffin pans with paper liners or coat the pans with cooking spray.  In large bowl, combine oat bran, flour, flaxseed, wheat bran, baking powder, and salt.  Set aside.
 
2.  In a blender, combine oranges, brown sugar, buttermilk, oil, eggs and baking soda.  Blend well.
 
3.  Pour orange mixture into dry ingredients.  Mix until well blended.  Stir in raisins.
 
4.  Divide batter evenly among muffin cups.  Bake for 18 to 20 minutes, or until toothpick inserted in the center comes out clean.  Cool in pans for 5 minutes before removing to a cooling rack.
 
Makes 24 muffins.
 
 

 
Karen's Marathon Cookies

 
Oatmeal Cookie
 
1 cup (2 sticks magarine or butter) *or substitute 1 cup applesauce
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups whole wheat graham flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
3 cups whole grain rolled oats
1 cup chopped dates
1 cup slivered almonds
1/8 cup flax seed 
1/8 cup wheat germ
 
 
1) Heat oven to 350 degrees
2)Beat together butter and sugar until creamy
3)Add eggs and vanilla; beat well
4)Add combined flour, baking soda, cinnamon and salt; mix well
5) Stir in oats and dates; mix well
6) Stir in almonds, flax seed, wheat germ
7) Drop by rounded tablespoonfulls onto ungreased cookie sheet. (flaten spoonfull on cookie sheet)
8) Bake 10-13 minutes or until golden brown
9) Cool 1 minute on cookie sheet; remove to wire rack
 
 
Makes about 4 dozen  ENJOY!!!!!!
